Apple and Quinoa breakfast porridge (GF)

With the cooler weather finally here (ok QLD people it still isn't cold like it is in our southern states but it is certainly cold for us) it is time for some wonderful warming breakfasts. This morning I made an apple quinoa porridge. Apples provide pectin, a soluble fiber, pectin works by binding to fatty substances in the digestive tract, including cholesterol and toxins, and promotes their elimination. Quinoa is a gluten free so great for those with intolerance's or allergies. It also contains a great source of protein and lots of essential nutrients.

You just have to love "Food as Medicine".


Recipe:

1/2 cup quinoa

2 apples (peeled, core removed and diced)

1 1/2 cups water

2 tsp cinnamon

Toppings (Sprinkle shredded coconut, chia seeds, chopped almonds)

Honey

Milk of choice (I use coconut milk)


Method:

In a saucepan bring the quinoa, apples and water to a boil. Reduce the heat to a simmer. Place a lid on the pan and allow to simmer for 20 minutes. This will absorb all the water. Remove from the heat and add in the cinnamon and stir until all combined.

Sprinkle with any of your selected toppings and drizzle with a little honey.

Serve with some milk and enjoy :)
